After cooking up an Indian feast for friends last night, we had a fridge full of leftover chutneys to find a use for today. I've been thinking over the concept of savoury french toast for a while, so this felt like the perfect time to try an indian inspired version. This is such a simple recipe. All you need is a pack of eggs, a few spices and fresh herbs, and a couple of pieces of bread to soak up all the goodness. And it's so tasty!

INGREDIENTS (for 2)
3 eggs
2 spring onions, finely chopped
A small bunch of fresh coriander, chopped
1/2 clove of garlic, finely diced
A good pinch of salt and pepper
1/4 teaspoon turmeric
1/2 a small green chilli, finely diced (you can use less if you don't want any heat)
80ml of milk
2-3 chunky pieces of bread
DIRECTIONS
Finely chop the spring onions, coriander, garlic and chilli.
All all ingredients into a large mixing bowl (except the bread) and whisk together well.
Add a splash of oil to a frying pan on a medium heat.
Dip one slice of bread into the eggy mixture and press it down to make sure the mixture is absorbed then carefully turn it over and repeat.
Place the dredged bread into the frying pan. Spoon some of the spring onions and chilli mix on the top and fry for 2 minutes on each side until golden brown.
Repeat with the remaining bread and dish up. Serve with your favourite indian chutney or raita.
