We've finally hit the glorious summer weather we've all been waiting for, and that means that it's time for a few lighter dinner options. Cooking in the summer always brings a different vibe. The hot pots and stews are well and truly put to one side, and the kebabs, mezze, salads, and fish dishes come to the forefront.
As a first fish recipe on the blog, I wanted to offer something a little different whilst still sticking with quick and easy cooking. This Lemon and Garlic Cod was inspired by a recipe I saw a while ago on a Greek food blog, and it's since become a staple dish for us to have out on our balcony with a glass of white wine at the end of a busy day. It's so easy to pull together, and goes especially well with some Greek style fries (cooked in olive oil with lots of salt, pepper, lemon juice and oregano) and/or a nice greek salad. Hope you enjoy!
INGREDIENTS (SERVES 2)
- 2 cod fillets
- 2 large garlic cloves, minced
- Lemon to garnish
For the Lemon Garlic mix
---
- 2.5 tablespoons of fresh lemon juice
- 2.5 tablespoons of extra virgin olive oil
- 1 tablespoon of melted butter
For the Fish Coating
---
- 1/3 cup plain flour
- 1 teaspoon ground coriander
-1 teaspoon paprika
- 3/4 teaspoon ground cumin
- 3/4 teaspoon salt
- 1/2 teaspoon black pepper
DIRECTIONS
Preheat the oven to 200 degrees c (fan).
Mix the lemon juice, olive oil, melted butter and crushed garlic in a bowl and put aside.
In a separate bowl, combine the flour, herbs, spices, and salt and pepper. These will make your fish coating.
Put a dutch oven/pan that can transfter to the oven on a medium high heat and add a glug of olive oil to the pan.
Meanwihile, Pat the cod fillets dry. Take the first fillet and dip it in the lemon garlic mix then dip in the flour mixture. Make sure the fish is fully coated then add to the pan. Repeat with the second fillet. Let the fish sear on each side (approx 2 minutes per side) until there is a crumbed coating forming.
Drizzle the remaining lemon/garlic mixture on top of the fish and bake in the oven for ten minutes until flaky.
Add a squeeze of lemon top and enjoy!
