Super Simple Chorizo, Spinach and Red Pepper Gnocchi

I am always keen to discover quick and easy weeknight meals that don't sacrifice flavour, and this super simple Chorizo, Spinach and Red Pepper Gnocchi ticks all the boxes. You can have it on the table in 20 minutes (including chopping time), it's packed with flavour, and only requires 6 key ingredients (excluding seasoning).


The chorizo is the star of the show here as most of the flavour comes from the rich chorizo oil that coats everything. I've found that the best way to get the most out of the chorizo is to remove the skin and tear it so that there are flecks of chorizo dispersed throughout.


INGREDIENTS (Serves 2)

- 1/2 chorizo ring

- 1 red pepper

- 1 clove of garlic, sliced

- 1 pack of gnocchi (serves 2)

- 100g baby spinach

- 1/2 onion

- Salt and Pepper to taste





DIRECTIONS

  1. To prep the ingredients, remove the skin from the 1/2 chorizo ring. Tear the chorizo into bitesize pieces and set aside. Next, finely chop the onion and garlic and slice the pepper.

  2. In a large frying pan on a medium heat, brown the chorizo then add the onions, peppers and garlic to the pan to cook once the oil has been released from the chorizo. You will likely need to add a splash more oil to the pan, depending on what chorizo you use.

  3. In the meantime, bring a pot of water to boil and cook the gnocchi following the instructions on the packet. I usually add a pinch of salt and a dash of olive oil to the water.

  4. Once everything has cooked in the pan, add the spinach and toss together until the leaves have wilted.

  5. Drain the gnocchi and add it to the pan and toss everything together for a minute to incorporate. Season with salt and pepper (and a few chilli flakes if you want to add a little heat) then serve.

This is such a simple recipe but it's really tasty. Sometimes at the end of a busy day you just want to get something together for dinner as quickly and as easily as possible, and this gnocchi is perfect for that.
